Not so many years ago I was standing in line at a potluck lunch and inadvertently said to the woman next to me, “I can’t believe someone brought store-bought snack cakes.” She plaintively responded, “Well, I didn’t have time to bake.” I quickly stuffed my mouth with something other than the only foot I was still standing on and smiled an apology.
In my defence, I come from a large family of over-achievers in the food and entertaining area. However, four children later, I’d rather watch their hockey games and concerts than spend extra time with my oven. My sense of domestic pride has been overcome by a desire for sleep and simplicity. And quite frankly, I am tired of baking cupcakes, even from a mix. So how do
we keep up during the busy holiday season? Easy — you go with healthy choices and present them in more than the run-of-the mill fashion.
