Cinnamon Apple Muffins (adapted from the Looneyspoons cookbook)

– Ingredients-

1½ cups quick cooking oats
1½ cups boiling water
1 cup whole wheat flour
½ cup all-purpose flour
½ cup brown sugar
1½ tsp baking powder
1 tsp baking soda
½ tsp salt
1 tsp ground cinnamon
¼ cup honey
¼ cup applesauce
2 eggs
3 tbsp butter, melted
1 tsp vanilla
1½ cups cored and finely chopped apples (the peel has all the nutritional value so leave it on!)
Cinnamon-sugar to sprinkle on top

– Directions –
  1. Preheat oven to 325°F. 
  2. Pour boiling water over oats in a medium bowl. Stir and let stand for 20 minutes.  
  3. Combine flours and next five ingredients in a large bowl. Set aside. 
  4. In a small bowl, whisk together honey, applesauce, eggs, butter and vanilla. Add applesauce mixture to oats and stir until smooth. Add oat mixture to flour mixture and stir until dry ingredients are moistened. Fold in chopped apples. 
  5. Spray large muffin tin with non-stick spray (or use paper cups). Divide batter among 12 muffin cups. Bake for 25 minutes, or until wooden pick inserted in center comes out clean. Remove from pan and let cool.
  6. Yields 12 muffins.

(per muffin): 192 calories, 3.9 g fat, 36.4 g carbohydrate, 4.2 g protein, 252 mg sodium, 8 mg cholesterol
