Avocado and Kale Salad in a Cucumber Bowl

– Ingredients-

1  medium bunch kale, stemmed and shredded
1 avocado, pitted and flesh removed
1 lemon, juiced
2 ½ tablespoons of leeks, white parts, washed and finely sliced
1 cup cherry tomatoes
3 radishes, sliced paper thin
½ teaspoon sea salt
1 English cucumber, sliced in quarter inch strips for a bowl
1 teaspoon seeds, sesame, pumpkin or sunflower

– Directions –

Step 1: Preparing the salad

  1. In a mixing bowl add the kale, avocado and lemon juice. With your hands, press to cream the avocado until thoroughly mixed.
  2. Mix in the leeks, tomatoes and some of the radishes, reserving a bit of the radishes for garnish.
  3. Finish with sea salt.

Step 2: Finishing the dish

  1. To make the cucumber round and to finish the salad, on the centre of the plate, connect the two cucumbers strips to fold to form a round bowl. Fill with a generous amount of salad.
  2. Add the seeds on top and serve.
  3. Serves 4.

As a variation: Add chopped fresh herbs or your choice of diced veggies. Consider substituting chard or spinach for the kale. For a quick snack wrap it in your favour whole grain tortilla.
