Toasted Brisling Sardines

– Ingredients-


  • 2 cans of brisling sardines in olive oil
  • 1 tbsp of oil from the cans
  • 1 tbsp finely chopped fresh herbs (parsley works well)
  • 1 tbsp red wine vinegar
  • Ground black pepper, to taste
  • 4 slices of your favorite bread, toasted (dark rye or sour dough is best)
  • 2 avocados, mashed
  • 1 lemon, zest and juice
  • Coarse salt, to taste


– Directions –


  • Whisk together a dressing of oil, vinegar, parsley, lemon zest and black pepper.
  • Gently toss the brisling in the dressing and set aside for 15 to 60 minutes.
  • Toast the bread.
  • Place equal amounts of avocado onto each piece of toast.
  • Place the brisling, either whole or mashed, on top of the avocado.
  • Top with a squeeze of lemon juice and some coarse salt.
