Sautéed Baby Spinach with Apples and Pears

– Ingredients-

 

2 tbsp olive oil
1 small onion, diced
2 cloves garlic, minced
¼ cup walnuts, chopped
2 medium apples, peeled, cored and diced
2 medium pears, diced
30 oz baby spinach leaves
3 tbsp honey
3 tbsp grainy Dijon mustard
salt and pepper

– Directions –

 

1. Heat the olive oil in a large skillet on high. When the oil is hot, turn heat to medium and add the onions and cook until translucent. Add garlic, walnuts, apples and pears; cook until the apples and pears are just soft, approximately 3 minutes.
2. While apples and pears are cooking, mix honey and Dijon in a separate small bowl and set aside.
3. Make sure spinach is clean and add the spinach to the skillet. Stir and cook another 2 minutes. When the spinach is just wilted, drizzle the honey – Dijon mixture over the spinach. Mix well and season with salt and pepper to taste. Serve hot
