Asian-Inspired Lutein-Rich Kale Salad

– Ingredients-

Salad
1 bunch kale, finely chopped
1 large carrot, shredded
4 hard-boiled eggs, sliced
1/8 tsp sea salt

Tamari-Ginger Vinaigrette
¼ cup olive oil
2 tbsp rice vinegar
1 tbsp finely grated ginger
2 tsp low-sodium tamari (or soy sauce)
2 tsp lime juice
2 cloves garlic, minced
1 handful cilantro, chopped

– Directions –
  1. Remove and discard the tough ribs from the kale. Chop the kale leaves into small, bite-sized pieces and transfer to a salad bowl. Grate the carrot.
  2. Give your kale a rubdown. Sprinkle the kale with a dash of sea salt (1/8 tsp.). Using your hands, massage the kale by scrunching and releasing the leaves until the kale is a darker green and fragrant. Add the carrot.
  3. Make the vinaigrette by whisking together all the remaining ingredients. 
  4. Toss the dressing with the salad, add the sliced eggs on top and serve.
