Oat Pancakes

– Ingredients-

 

2 cups large rolled oats
1 ½ cups plain yogurt (or kefir)
2 eggs
2 tbsp melted unsalted butter
¼ tsp sea salt
½ tsp baking soda
2–3 tbsp unbleached fl our
½ cup fresh blueberries (optional)
Oil (like coconut oil or ghee)

– Directions –

 

1. Mix first two ingredients in a bowl, scrape down sides and cover the bowl with a plate. Leave on the counter or other warm place overnight.
2. Pre-heat griddle or pan to 350 °F.
3. Break eggs over soaked oats, add melted butter and salt. Mix well with spatula.
4. Sprinkle fl our and baking soda over the mixture and stir well.
5. If adding in berries, stir them in now.
6. Melt oil on preheated griddle or pan. Cook pancakes a few minutes per side.
7. Enjoy with fruit salad, berries, yogurt, cream, cinnamon-sugar, and/or maple syrup.
