Asian-Cucumber Quinoa Salad

– Ingredients-


Lunch or Dinner, Serves 4

1/2 cup quinoa
1 cup water
1 cucumber, chopped
1 tomato, chopped
1/2 red pepper, thinly sliced
1/4 cup chopped green onions
2 tbsp each soy sauce, sesame oil and rice vinegar
1 tsp liquid honey
1 tsp finely grated ginger root

– Directions –


  1. In saucepan, bring quinoa and water to boil; cover, reduce heat to simmer and cook for 15 minutes. Transfer to large bowl; let cool.
  2. Add cucumber, tomato, red pepper, pine nuts, onions, soy sauce, sesame oil, rice vinegar, honey, and ginger; toss to combine.
