Streusel-topped Crustless Pumpkin Pie

– Ingredients-

Streusel Topping

1/4 cup packed brown sugar
1 cup oatmeal
1 tbsp butter, softened

Pie Filling

2 cups pumpkin puree (canned or fresh0
1 cup vanilla soymilk (or milk including 1 tsp vanilla extract)
2 large eggs
1/2 cup granulated sugar
1/3 cup spelt flour (or wholewheat)
1/3 tsp pumpkin pie spice
1/8 tsp sea salt

– Directions –
  1. Heat oven to 350°F. Spray 6–8 ramekins with cooking spray.
  2. In a small bowl, mix topping ingredients together. Set aside.
  3. In a large bowl, mix pudding ingredients with a whisk until smooth. Pour into ramekins leaving at least ¼ inch space from the top. Sprinkle with topping.
  4. Bake for 35 minutes. Cool 15 minutes for a warm dessert.
  5. OPTION: Bake in a 9-inch glass pie plate. Increase cooking time to 55 minutes.
  6. Serves 8.

Think about this: Don’t throw out the seeds of your winter squash as they are highly nutritious and make a wonderful snack. Clean them well and dry, then toss with a little olive oil, salt, pepper and roast in your oven on a baking sheet until they are fragrant and a little crispy. Yum!!
