- Heat oven to 350°F. Spray 6–8 ramekins with cooking spray.
- In a small bowl, mix topping ingredients together. Set aside.
- In a large bowl, mix pudding ingredients with a whisk until smooth. Pour into ramekins leaving at least ¼ inch space from the top. Sprinkle with topping.
- Bake for 35 minutes. Cool 15 minutes for a warm dessert.
- OPTION: Bake in a 9-inch glass pie plate. Increase cooking time to 55 minutes.
- Serves 8.
Think about this: Don’t throw out the seeds of your winter squash as they are highly nutritious and make a wonderful snack. Clean them well and dry, then toss with a little olive oil, salt, pepper and roast in your oven on a baking sheet until they are fragrant and a little crispy. Yum!!
